If you’ve ever had baba ghanoush this version might blow you away!

2 medium eggplants
½ cups tahini sauce
4 whole raw garlic cloves, chopped
¼ cup virgin olive oil
½ cup fine chopped fresh parsley
1 ½ tablespoons salt
2 lemons, juiced
1 cup raw whole sweet peas


  1. Poke eggplants with a knife two to three times each on top.
  2. Grill or bake them in a pan for 20-30 minutes. If it feels and looks soft on the inside, it is ready to take out.
  3. Peel off  the skin of of the eggplants and chop them finely. Place them in a large bowl.
  4. Add lemon, olive oil, tahini sauce, parsley and mix in with finely chopped eggplant. Add garlic and salt to taste.
  5. Decorate the top with parsley and sweet peas. Drizzle the top with 1 tablespoon of olive oil.
