I make this recipe in batches every week, as it lasts 3-4 days in the refrigerator. It’s versatile and it pairs well with nearly everything.  A perfect start to your morning.

Porridge Ingredients:

1 cup buckwheat groats, soaked overnight
2/3 cup unsweetened almond milk
1 tbsp chia seeds
1 tsp vanilla extract
2 tsp maple syrup
1/2 tsp ground cinnamon

Toppings:

Fresh fruit, such as strawberries and blueberries
Nuts, such as almonds and walnuts
Shredded coconut flakes
Hemp hearts

Directions:

  1. Soak buckwheat groats overnight, or at least for four hours.
  2. Drain through sieve, and rinse thoroughly.
  3. Combine all of the porridge ingredients into a Vitamix or food processor. Pulse for 20-30 seconds, until a creamy consistency is achieved. * The mixture will appear very runny at first, but will thicken up toward the end.
  4. For a chocolatey version, add 1 tsp raw cacao powder to your Vitamix.
  5. Add toppings.
