Packing a picnic basket? Don’t forget the coleslaw!

1/2 a head of cabbage
1 carrot
2 apples
1 red onion
2-3 sticks of celery
Arugula (optional)

1 tbsp tahini
1/2 lemon, juiced
Himalayan pink salt
1tsp sweetener (agave or maple syrup)

  1. Thinly slice the cabbage and red onion
  2. Finely chop the carrot, celery and apples. Add arugula.
  3. Transfer all ingredients to a large bow.
  4. For the dressing mix together tahini, lemon juice , sweetener and add salt to taste. You can add chili pepper as well.
  5. Pour the dressing on top of the coleslaw and mix together evenly.
