You will fall in luvvv with these muffins

Luvvvly Lemon Lavender MuffinsLuvvvly Lemon Lavender Muffins (Vegan) |

(Makes about 12 muffins)

2 cups flour
½ cup coconut sugar
1 T baking powder
½ t salt
3 T lavender (I used the lavender buds and grounded a bit as well)
½ cup almond milk
¼ coconut oil
2 flax eggs
4 T lemon juice (Or 1 large lemon)
Zest of one lemon
1 ½ t vanilla extract


1. Preheat the oven to 350F and coat muffin tin with a small amount of coconut oil.
2. To make a flax egg, mix the 1 T ground flax seed and 3 T water together in a small bowl, and let set in the fridge for 10/15 minutes.
3. In a larger bowl, mix dry ingredients (including lavender and lemon zest)
4. In the same bowl as the flax eggs, mix the almond milk, lemon juice, vanilla extract, and coconut oil.
5. Add wet ingredients to dry and stir until well mixed.
6. Pour mixture into muffin tin, making sure to fill each cup ¾ or less of the way up.
7. Bake for 25/30 minutes, until an inserted toothpick comes out clean.
8. Pour some maple syrup on top, and enjoy!
