Crust Ingredients:
2 cup peanuts
1 cup dates
1/2 cup unsweetened shredded coconut
Juice of half a lemon

Cheesecake Ingredients:
2 +1/3 cup  cashews
1/4 cup coconut oil
1/4 cup agave nectar
1 tsp vanilla
Juice 1/2 lemon

Blueberry Layer:
1/2 cup blueberries
1/4 cup agave nectar
1/4 cup coconut oil


  1. Pre-soak cashews for at least 4 hours.
  2. Spray an 8×8 baking dish with coconut oil.
  3. Place all crust ingredients into food processor and pulse until dough like.
  4. Add dough to dish an press down evenly.
  5. Place all cheesecake ingredients into food processor and pulse until mixed.
  6. Layer onto of crust.
  7. Place all blueberry topping ingredients in processor and pulse into mixes.
  8. Layer on top of cheesecake layer evenly.
  9. Place dish in freezer for at least 3 hours.
