Bounty Bars (Vegan)

Bounty Filling:

¾ cup of coconut cream
2 ½ cup desiccated coconut
3 Tbsp of rice malt syrup
5 Tbsp of coconut oil
Pinch of himalayan sea salt
¼ tsp of vanilla


Cacao Coating:

¼ cup coconut oil
¼ cup cacao butter
¾ cup cacao powder
2 Tbsp Coconut Nectar
1 Tbsp tahini (optional)


Optional Toppings:

Shredded Coconut
Goji Berries
Cacao Nibs

Bounty Filling:

1. Combine all the middle ingredients in a saucepan over low heat.

2. Once all ingredients are combined you can start to shape them and place on a tray lined with baking paper. Or alternatively place in a baking try and cut into squares once frozen

3. Put in the freezer to set

Once the middle is frozen you are ready to make the cacao coating!

Chocolate Coating:

1. Combine the ingredients on low heat- making sure it doesn’t burn!

2. When ready, coat the coconut bars evenly with the cacao sauce. As the bars are cool they will harden reasonably quickly.

3. Feel free to pop back into the freezer for a minute and do a second coat and decorate with toppings. Refrigerate to set if needed.
