Heirloom tomatoes are one of my favorite things to eat during the Summer time. Not only are they pretty, but they contain lycopene, which helps stimulate the immune system. If you want a more nutrient-dense salsa, you can grill the tomatoes, which will actually increase the amount of lycopene by up to 8 times the amount of raw tomatoes.

Raw, Vegan, Dairy-Free, Soy-Free, Gluten-Free, Nut-Free


3 ripe heirloom tomatoes, diced
Half of a red onion, diced
Half of a mango, diced
Half of a jalapeño, finely diced
1/4 – 1/2 cup cilantro, chopped
1 lime (juice + zest)
Pinch of salt and pepper


  1. Dice the heirloom tomatoes, red onion, mango, and jalapeño. Add to a medium-sized serving bowl.
  2. Finely chop the cilantro and stir into the bowl.
  3. Slice a lime in half and use the juice from both halves. For more flavor, zest half of the lime before juicing.
  4. Sprinkle with salt and pepper (if needed). Let sit for 5-10 minutes.
