Lemon Coconut Cheesecake (Raw & Vegan)

“Cheesecake” Ingredients:

Juice of 2 lemons
Pinch of Himalayan crystal salt
1/4 cup dried coconut
1/4 cup water or fresh almond milk
2 cups raw cashews
12 pitted dates
1/4 cup pure maple syrup

Crust Ingredients:

1/2 cup raw pecans
1/2 cup raw almonds
1/2 cup pitted dates
1/2 cup raisins
1/4 cup coconut

Directions:

  1. Prior to making this recipe you should soak all of your nuts. I recommend that you soak your almonds for at least 8 hours, pecans for at least 6 hours, and cashews for at least 2 hours in clean purified water, then strain and rinse well.
  2. In a food processor, combine all of the ingredients for your crust. Process until you reach an even consistency and the mixture molds together by pressing together. For best results, process pecans and almonds together first before adding other ingredients to help break them down.
  3. Using your hands, press down your crust into a pie pan so that it sticks together. To assist in removing cheesecake later you can coat the bottom of your pan with coconut oil.
  4. In a blender, combine all of the ingredients for your cheesecake filling in the order listed.
  5. Blend for at least 1 ½ – 2 minutes to ensure that you have a very smooth and creamy texture.
  6. Pour your “cheesecake” filling into your pan and place into the freezer to firm up for 1-2 hours before serving or refrigerate if you are making this a day or two in advanced.
