This recipe gives you an excuse to eat bruschetta for breakfast.

1 cup sun gold cherry tomatoes
2 slices whole wheat toast
1 teaspoon olive oil
salt and pepper, to taste


  1. Rinse and dry tomatoes.
  2. Chop the tomatoes roughly.
  3. If tomatoes are watery, scoop out the seeds.
  4. In a bowl, toss chopped tomatoes with olive oil, salt and pepper.
  5. Spread tomato mixture evenly on each piece toast.
  6. If desired, add shredded fresh basil to each toast.


I discovered my love of vegan cooking and all things food when I got my first kitchen during my sophomore year of college, so all of the recipes I share are designed to be made in a hurry and on a dime.
