Sweet Potato Stuffed Banana Date "Bread" (Vegan) |


1 skinned sweet potato
1 banana, mashed
3/4 cup buckwheat flour
3/4 cup rice milk
1 tbsp coconut oil
1 tbsp flax egg
Pinch of baking powder
Sprinkle of cinnamon powder

3 dates in hot water (mix until creamy)


  1. Steam the sweet potato and mash using fork & set aside in bowl.
  2. Preheat oven to 350 degrees Fahrenheit.
  3. In a mixing bowl, assemble and mix all ingredients.
  4. Pour half of the batter into a bread tray.
  5. Carefully layer sweet potato mash on top of it.
  6. Pour the rest of the batter on top.
  7. Bake for 20 minutes.
