These flapjacks are an amazing nutritious snack with a hint of guilt-free indulgence.

Ingredients:

3/4 cup dates
1/2 cup water
1+1/2 cup oats
2 ripe bananas
1/2 cup almonds
1/4 cup sunflower seeds

Directions:

  1. Pre-heat your oven to 350°F
  2. Begin by bringing the dates to a boil in 1/2 a cup of water, then reduce to a simmer until the dates soften. Alternatively, you can soak the dates in the water for 6-8 hours to soften them.
  3. While you are waiting for your dates and water to cool, place the almonds and sunflower seeds in a food processor and blend until they are finely chopped.
  4. Add your oats and pulse two-three times. Transfer the mixture to a bowl.
  5. Place your banana, softened dates and water in the food processor and blend until smooth. (If you just can’t resist, have a small spoonful of this mixture. It’s delicious!)
  6. Pour the banana-date mixture into the bowl and combine well with the oats, almonds and seeds until everything is evenly coated. The mixture should be lovely and sticky.
  7. Spoon the mixture into a lined square baking tin and place in the oven for 20 minutes.
  8. Remove from the oven and slice
