Pear Ginger Chia Pudding (Vegan) |


2 1/2 C whole coconut milk
1/4 C maple syrup
1/4 C crystalized ginger, diced
1/2 tsp. ginger powder
1 tsp. almond extract
dash of salt
1 small pear, chopped and sliced
1/2 C Nutiva Organic Chia Seeds


  1. Blend coconut milk, maple syrup, almond extract, ginger powder and salt in blender until smooth.
  2. Stir in chia seeds, and mix thoroughly. Let sit for 5 minutes and stir again. Let sit for 10 minutes, stir again.
  3. Pour into bowls, cover and refrigerate overnight.
  4. Serve chilled with sliced pears, additional crystalized ginger or plain.
