Sweet Potato Fries (Vegan)

Ingredients:

1 small sweet potato
1 tbsp fresh thyme, chopped
2 tbsp EVOO

Directions:

1. Chop the sweet potato into large chunky strips and place on a baking tray covered in foil.
2. Coat the sweet potato strips in oil and sprinkle the chopped thyme over the chips.
3. Place the fries in the oven to cook for 20 minutes at 350F or until they begin to colour and the skin begins to crisp.
