1/2 cup sunflower seeds, soaked
1 celery stalk
1 scallion
1 tbsp basil
2 tbsp cashew mayo
1 tsp olive oil
1 tsp sea salt & pepper
1/4 red bell pepper


  1. Combine sunflower seeds, celery & scallions in a blender or just finely chop.
  2. Put the sunflower seed mixture in a bowl & stir in cashew mayo (soaked cashews, lemon juice, white miso paste, salt & pepper, bit of water), add basil, olive oil and salt & pepper to taste.
  3. Garnish with chopped red bell peppers.
