These warm little rounds are a perfect meat alternative + are packed with beans and flavorful spices! Not only are they Vegan, but they are also gluten-free. Avoid the guilt and fall in love as you down the whole batch!

1 cup dry (or 2 cups cooked) garbanzo beans (see instructions below)
4 cups of water
1/2 cup red or yellow onion
1/4 tsp cayenne pepper
1/4 tsp pepper
5 garlic cloves (chopped)
1.5 tsp cumin
1.5 tsp salt
1/4 cup tapioca flour
1/4 cup fresh organic cilantro


  1. If using dry beans, soak 1 cup of dry beans in 4 cups of water overnight (Note: 1 cup dry beans = about 3 cups cooked).
  2. Drain and rinse the beans in the morning, removing any rocks or bad beans.
  3. Place in a crockpot with 4 cups of fresh water, and cook on high for 6 hours, or until the beans are softened.
  4. Drain the cooked beans + place 2 cups in the food processor with all the remaining ingredients.
  5. Puree all ingredients into a smooth mixture.
  6. Line a cupcake tin and scoop the mixture into each to form 12 equal rounds.
  7. Bake for 35 minutes at 375 degrees.
  8. Allow the falafels to cool completely before removing from the liners.
  9. Enjoy them with tzatziki sauce or hummus on pita bread or your favorite gluten-free bread!
