Buckwheat Pancakes (Vegan)

Buckwheat Pancakes (Vegan) | Millennial-Kitchen.com


1/2 cup raw buckwheat groats (soaked over night)
1/2 medium ripe banana
1/4 cup water
1 T chia seeds
1/4 t Cinnamon
1/2 T lemon juice
pinch of salt


  1. Drain and rinse buckwheat well (until water clear) and add to blender.
  2. Blend buckwheat with (new)water and banana…then add rest of ingredients and blend until well combined.
  3. Heat frying pan (I used a mini cast iron) with a little coconut oil, scoop 1/4 cup batter into pan and then turn burner to med-low, cook a few minutes or so (depends on your burner) and then flip (should flip easily) and cook on other side. Continue with rest of batter.
  4. Enjoy with your favourite toppings!

Makes 3-4 flapjacks/thick pancakes
