Creamy Basil Tomato Bisque (Vegan)

Ingredients:

1 lb organic Roma tomatoes (about 6 medium sized)
1/2 a yellow onion, chopped
2 TBSP olive oil
1 bay leaf
1.5 tsp pepper
1 tsp salt
1 TBSP whole wheat flour or tapioca starch
1 TBSP vegetable-based blend (like Earth Balance)
1/2 cup organic coconut cream
6 fresh basil leaves

Directions:

  1. In order to peel your tomatoes, slice an “X” through the skin in the top of each and arrange in a colander (“X” up).
  2. Boil a large pot of water and pour slowly over each tomato so that the water begins to peel the skin off.
  3. Peel the remainder of the skin off the tomatoes (if it does not come off easily, repeat the process one more time).
  4. Chop the tomatoes and place along with the onions, bay leaf, salt, and pepper in a pan over medium heat.
  5. Once simmering, reduce heat to medium-low and cover for 25 minutes.
  6. Remove the bay leaf and puree the mixture in a food processor until smooth.
  7. Make a rue by creaming the flour and butter together with a fork.
  8. Add the rue, cream, and 2 chopped basil leaves and puree again until well combined and smooth.
  9. Return mixture to the pan to simmer for 5 minutes or until it reaches desired thickness.
  10. Top each bowl of bisque with one chopped basil leaf + enjoy!
