This is a simple and delicious dessert, perfect for dinner parties or any event really. Made into a heart-shaped tin, it’s best enjoyed with friends, family and your loved ones.

Luxury Lemon Tart (Raw & Vegan) |

1.5 tbsp coconut oil
2 handfuls of almonds
10 medjool dates
A pinch of rose salt

3/4 cup soaked cashew nuts
3 tbsp coconut oil
2 tbsp agave
A pinch of pure vanilla
Zest and juice of one big, organic lemon
(2 tsp lucuma)

1 can coconut cream/full fat coconut milk


  1. Begin with putting the coconut cream or milk in the fridge.
  2. Soak the cashews for at least 2.5 hours, but preferably overnight.
  3. Brush your tin with coconut oil to prevent the crust from sticking to it. 
  4. Crush the almonds in a food blender, and add the dates and blend until it forms a dough.
  5. Then, add the coconut oil and salt. Press the dough into your tin, and put in the fridge.
  6. Next, it’s time for the filling. Blend the cashews until it starts to remind of cream, this will take a while so be patient!
  7. To get the texture right, make soure your nuts are soaked well!
  8. Add the lemon juice and zest. It’s important to use an organic lemon, since it doesn’t have any toxins on its skin.
  9. Then, add the rest of the ingredients and blend well.
  10. Spread on top of the crust, and let it set in the fridge overnight or until set.
  11. Keeping the coconut milk overnight in the fridge, will separate the liquid part and the heavy cream part.
  12. Whip the thicker part like whipping cream, and top the ready pie with it.
