It’s PB&J like you have never experienced before.

Peanut-Free “PB&J” Double Baked Oatmeal (Vegan)

Peanut-Free "PB&J" Double Baked Oatmeal (Vegan) |


1/2 cup old-fashioned oats
1 cup unsweetened vanilla almond milk
2-3 drops stevia
1 banana
1 tablespoon coconut flour
1.5 tbs raspberry chia seed jam
Nut butter (cashew or almond butter)


  1. In a small pot on the stove over medium heat, mix oats with almond milk.
  2. Add stevia.
  3. Wait for oats to absorb half of milk and then add the rest of the ingredients.
  4. Once fully combined and all milk has been absorbed, pour mixture into a greased ramekin.
  5. Swirl in jam.
  6. Bake at 350F for 12-18min, or until top is lightly browned.
  7. And raspberries in middle and drizzle with nut butter of choice.


My best memories have been made in and around the kitchen- celebrating the love one gives to others through food and entertaining. I embrace whole, fresh, and locally-sourced ingredients; and do my best to eschew processed foods, along with refined sugars. I enjoy healthy decadence and I experiment often with raw, vegan, gluten-free and paleo cuisines. While I personally do not believe in labels, and consider myself a "flexitarian", above all I try to stay 100% clean in my ingredients.
