Spicy Cauliflower Rice (Raw & Vegan)

Ingredients:

5 cups or 1 head cauliflower (roughly chopped)
Juice of 1 lime
1/3 cup red onion (chopped)
1/2 cup green onion (chopped)
1 cup tomato (chopped)
1/4 – 1/2 teaspoon cayenne pepper
1 teaspoon cumin
1/2 cup cilantro (chopped)
1/2 teaspoon Himalayan crystal salt
2 tablespoons extra virgin (first cold pressed) olive oil

Directions:

1. Combine all ingredients, except for tomato, in a food processor and pulse quickly just a few times. This can turn mushy very quickly! The consistency is up to you so feel free to pulse as short or as long as you would like.
2. Pour your “rice” into a large bowl and mix in your chopped tomato.
