Sweet Potato Superfood Burger (Vegan)

Sweet Potato Superfood Burger (Vegan) | Millennial-Kitchen.com

(Makes 4-5 Patties)

Ingredients:

1 ½ c millet, cooked
1 med. Sweet potato, steamed with ¼ c remaining water
1 flax egg
½ c cilantro, chopped
1 scallion, chopped
1-2 cloves garlic, minced
1 tbsp. Nutiva Organic Chia Seeds
1 tbsp. Nutiva Organic Coconut Manna
2 tbsp. Nutiva Organic Hempseeds
1 tsp. paprika
1 tsp. sea salt
Pepper to taste

Directions:

  1. Place steamed sweet potato with water and cooked millet into a mixing bowl and mash thoroughly.
  2. Add flax egg and mix in well.
  3. Then add the remaining ingredients and form into patties and grill on skillet (medium heat) with Nutiva Organic Red Palm Oil or Nutiva Organic Coconut Oil.
  4. Cook until golden, about 10 mins. and gently flip onto other side.
  5. Cook until golden brown.
  6. Serve hot.
