Vegan Pad Thai

Vegan Pad Thai |


2 Tbsp. tamarind paste
3 Tbsp. brown sugar
2 Tbsp. soy sauce
1 cup + vegetable broth
1 Tbsp. chopped cilantro (optional)

1 bunch green onions
1 package Age (pronounced “ah-geh”, Japanese fried tofu)
1/4 – 1/2 cup chopped roasted peanuts
1/2 – 15 oz. package, thai rice noodles


Fill a pot with water and set it to boil over high heat. Whisk the sauce ingredients in a small bowl and set aside. While waiting for the water to boil, place a sauté pan with a little oil over medium-low heat, and chop your Age into bite size pieces.

Sauté the tofu in the pan for a few minutes. While that’s cooking, chop most of your green onions into 1 inch pieces, and throw into the pan with the tofu. After a minute or two, add your sauce to the sauté pan.

By now, your water should be boiling. Turn off the heat, and add half of the box of rice noodles. Let the noodles cook in the hot water, about 8-10 minutes, but taste test them to be sure. They should be al dente, as they will cook a bit more in the sauce. Pad Thai doesn’t keep well, so you’ll want to make only enough for one meal. If you have 4 people, double the sauce recipe, and make the whole box of noodles.

The sauce should be simmering in the sauté pan. If it starts to reduce too much, add more vegetable broth. Cover if necessary. When the noodles are done, add them to the pan with the sauce, and cook everything together for a few minutes, covered. Add more vegetable broth if necessary.

Serve in a bowl and cover with more chopped green onion and chopped peanuts. Now get ready for the Pad Thai cravings to hit! It’s become an addiction in our house.
