A long-time favorite done vegan and much healthier! Creamy, chewy, slightly sweet, and so comforting. This is great to eat if you are feeling a bit under the weather or are just craving something warm.

2 cups cooked wild rice
1 can light coconut milk
1 cup water
2 tsp vanilla extract
1/8 tsp sea salt
2 to 4 tbsp maple syrup, to taste
2 tsp cinnamon


  1. In a saucepan, combine the cooked rice, coconut milk, water, vanilla extract and salt. Bring the mixture to a boil and reduce to a low simmer. Cover the saucepan, but leave the lid slightly open to let steam escape.
  2. Simmer for 20-25 minutes, stirring occasionally. When the mixture is quite thick, add the maple syrup and cinnamon.
  3. Serve warm or cool, with a slight dusting of cinnamon on top. Enjoy!
