Who says snacking right has to be hard?! This is one of my favorite snacks for when I’m on the go.

Apple Stacks

Ingredients:
1 organic golden delicious apple
Homemade or vegan peanut butter (I like Peanut Butter + Co.!)
Raw shredded coconut
Homemade Fall Granola (recipe available on my profile)
Enjoy life or other vegan chocolate chips

Instructions:
Wash and slice your apple into bread-like slices. Smear on the peanut butter (try it with PB+Co’s cinnamon raisin or white chocolate!) and sprinkle on the remaining ingredients, one layer at a time. Feel free to substitute for your favorites! Stack up and wrap them up for a sweet treat to bring to work. YUM
