Black Forest Fudge (vegan, gluten free, soy free, nut free)

Ingredients:
1 and 3/4 cups cooked black beans
6 Tbsp cocoa powder*
*sift first to ensure there are no clumps!
3 Tbsp raw carob powder (or more cocoa)
5 Tbsp melted coconut oil
5 large medjool dates, pitted (soaked for 5 minutes in hot water to soften)
OR 3-4 Tbsp maple syrup
1/4 teaspoon sea salt
20 fresh cherries, pitted

Directions:
1. throw everything EXCEPT the cherries into a food processor and process until smooth
2. once smooth, with the processor running, throw in the pitted cherries (you can process entirely, or just pulse to add some texture to the fudge)
3. Smooth out fudge into a small baking pan, or container of choice (I used 2 rectangular glasslock containers), Try and make it as SMOOTH as possible. 4. score into pieces and sprinkle with coconut, cherries or cacao nibs as garnish
5. cover and let set before serving (freezer for 1 hour or fridge for 2 hours).
6. remove from freezer/fridge, cut into desired pieces, and enjoy!
