Cauliflower Pasta (Vegan)

For the Sauce:

2 cups chopped cauliflower
1 garlic clove finely chopped
half a small onion
3 tbs nutritional yeast
1/4 tsp salt
1/2 cup almond milk
1/2 tsp lemon juice
pepper to taste

For the Pasta:

2 zucchinis

Directions:

1. Place the chopped cauliflower into a pan and let boil until soft when spiked with a fork
2. Finely chop the garlic and onion, place into a frying pan and fry on a very low heat so that they do not brown
3. Spiralise the zuccinis to make the pasta
4. Remove the water from the pan of cauliflower, add the almond milk, nutritional yeast, salt, lemon juice and the fried onion and garlic. Blend all ingredients until very smooth and creamy – tastes best completely smooth with no lumps!
5. Place the zuccinis in boiling water for 2-3 minutes until slightly softened and drain
6. Put the cauliflower mixture back on the heat to warm it through and then add to the zuccuni pasta
