Chocobutter Breakfast Cookies

2 ripe bananas
1 cup organic rolled oats
1 TBSP raw cacao
2 TBSP raw shredded coconut (plus extra for topping)
4 TBSP Peanut Butter + Co (flavor of your choice)
1 tsp cinnamon
1 tsp vanilla extract

Mash your two bananas and mix together with your oats, cacao, 2 TBSP of the peanut butter, cinnamon, and coconut. Scoop onto a lined baking sheet and flatten into round cookie shapes. bake for 10 minutes at 375 degrees. Melt the remaining 2 TBSP of peanut butter with your vanilla extract. Allow cookies to cool completely before drizzling with your melted PB + vanilla mixture. Sprinkle with coconut and freeze until solid. Store in the fridge in an airtight container.

*Note: these are not meant to be super sweet, as they are breakfast cookies! You can sweeten them a bit more with a tablespoon or two or organic coconut sugar*
