Clean Mac & Cheese (Vegan) |


1 box gluten free pasta (brown rice or quinoa pasta)
1 cup raw cashews
1 cup unsweetened nut milk (hemp/almond/coconut milk)
2 cloves of garlic
1/3 cup nutritional yeast
2 tbsp. tahini
3 tsp. lemon juice
1 tsp. turmeric
dash of cayenne pepper
salt & pepper to taste


1. Cook gluten free quinoa pasta “al dente” (about 6-9 minutes)
2. As the pasta cooks, combine raw cashews and nut milk in food processor (for a thinner consistency soak cashews for 30 minutes prior to cooking)
3. Once cashews & nut milk are blended nicely, combine all other ingredients in food processor 4. Put strain & rinsed pasta back in pot, stir sauce in over low heat for 3-5 min, make sure you stir so you don’t burn the pasta!
