Ginger-Beet Quinoa Salad

Ingredients: (serves 2)
1/2 cup quinoa
1 cup broth or water
1/2 raw beet peeled & shredded
1/4 cup chopped almonds
1 tbsp fresh grated ginger
juice & zest from 1/2 lemon
2 tsp olive oil
2 carrots shredded
2 clementines or 1 orange
1/3 cup fresh basil (or parsley)

Directions:

Add the quinoa, broth, pinch of salt and 1/2 of your shredded beet to a pot. Bring to a boil, then reduce to a simmer for 15-20 minutes (till the broth is absorbed). Once it’s done, fluff quinoa with a fork then toss with the rest of your shredded beet & chopped almonds. Whisk together the grated ginger, olive oil, lemon juice & lemon zest. Pour mixture over the quinoa. Add clementines, fresh chopped herbs, and shredded carrot. Toss to combine or eat it as presented in the picture. Either way it is a super fresh and flavorful salad!
