Killer Garlic + Artichoke Dip

1 head of garlic (yes, a whole head!)
Olive Oil
6 oz marinated artichokes (chopped)
1/2 cup organic dairy-free yogurt
1/2 tsp pepper
1 cup vegan cheese
Toasted baguette slices

Remove the outer skin of your head of garlic and chop the bottom off so it can stand upright. Place on a piece of aluminum foil and drizzle with olive oil. wrap the foil around the head of garlic and bake at 375 degrees for 45 minutes. Allow to cool slightly and squeeze the roasted garlic from the bulbs. Mash the garlic and stir together with the chopped artichokes, yogurt, pepper, and cheese. Place in baking dish and bake at 350 for 30 minutes. Serve with your toasted bread and try not to drool on yourself!
