I cut the sweetpotato a little bit, than stuffed it with onion, garlic, fresh rosmary and pomegranate seeds. I sprinkled some salt, pepper and coconut oil on it. Covered it with aluminium foil and cook in the oven slowly for almost 1hour. Was my Christmas dinner,so delecious! The pomegranate seeds give some sour taste for the sweet potato, with the fresh rosemary it is just perfect!
