Kale Stew

Ingredients:
1 lb dry beans (I used great northern)
1/2 cup vegan cheese
6 cups water
Organic Kale (I used about 6 large stalks)
4 garlic cloves
1/2 a large onion
1/2 tsp paprika
1/4 tsp red pepper flakes
1 tsp each of salt + pepper
2 TBSP olive oil

Instructions: Soak your beans in water overnight. In a large pot over medium heat, add onion + oil +paprika + salt + pepper + red pepper flakes and cook until the onions are softened. Add in the minced garlic + soaked beans and stir until coated. Pour in the water and bring stew to a boil . Reduce heat to low and allow to simmer for 1 hour. Add Chopped kale and allow to simmer for an additional 30 minutes. Mix in your cheese immediately before serving. YUMMY!
