Quinoa Veggie Curry

1 organic red bell pepper
1 head organic broccoli
2 TBSP red curry paste
1 tbsp organic sushi ginger
1 TBSP sesame oil
1/2 red onion
1/2 can (about 7 ounces) organic coconut milk
1/2 cup dry quinoa
1 tsp organic vegan butter (like earth balance)
Flavorgod garlic lovers seasoning + spicy everything seasoning (or your favorite substitutes)

Place 1/2 cup dry quinoa in a pot with 1.5 cups water + put over high heat. Once boiling, give it a stir + reduce heat to low. Top the pot and allow to cook until all water is absorbed and quinoa is fluffy. Once cooked, stir in ghee + season with FlavorGod spicy everything seasoning. Keep warm until serving.

Dice your onion + bell pepper + sautée with sesame oil over medium heat until softened. Add the minced ginger + red curry paste + coconut milk + 1/2 cup water. Season liberally with FlavorGod garlic lovers + a sprinkle of salt + stir well. Wash and chop the broccoli before adding it to your pan. Top your pan + allow to simmer over medium-low heat until broccoli has steamed a bit (about 3-5 minutes). Remove the top + allow the liquid to reduce a bit as the broccoli finishes cooking. Top a scoop of quinoa with your yummy veggie curry!
