This junk is GOOD. I’ve had my fair share of the traditional way, but this is one you can feel good about.


Sweet Potato Soufflé

2 large organic sweet potatoes
1 TBSP organic coconut oil
1/4 cup raw organic maple syrup
1/4 tsp cinnamon
1/2 tsp salt
1 can full fat organic coconut milk (you’ll be using 1 TBSP organic coconut cream from it… see below)
Your favorite healthy marshmallows

Allow your can of coconut milk to sit in the fridge overnight. A thick cream will form on top. Remove 1 TBSP to be used in your mixture.
Wash, poke, and bake 2 large sweet potatoes for 1 hour at 400 degrees. Allow to cool for 5 minutes before removing the skin and mashing with the remaining ingredients (except the marshmallows). Stir in desired amount of marshmallows OR place your mixture in a baking dish + cover with marshmallows before returning to the oven to broil (watch closely and remove once mallows are melted and slightly browned). Serve up HOT and ENJOY!
