I absolutely love using a light cole slaw as topping on my tacos. It allows me to eat extra veggies and gain a crisp, refreshing flavor in every bite. Make a super simple vegan cole slaw for your next taco tuesday.

2 large organic carrots
1 large broccoli stalk
3 cups organic purple cabbage
Juice of 1/2 a large lime
1 tsp pepper
1 tsp salt
2 TBSP olive oil
1/4 tsp cumin

Wash and shred all of your veggies (don’t worry about exact amounts, just eyeball your raw veggie mixture!). Toss with the remaining ingredients and refrigerate until serving.
