Spicy Lemongrass-Peanut Noodles

Ingredients: (serves 4)
1/4 cup minced lemongrass
2-3 cloves garlic
10 oz spaghetti
1 tsp of oil
3 cups mixed veg (of your choice)
3 tbsp soy sauce
1 tbsp sriracha
1 tbsp brown sugar
1-2 tbsp grated fresh ginger
1/4 cup peanut butter
2 tsp sesame oil
juice & zest from 1 lime
*sesame seeds, lime wedges, peanuts & scallions for garnish

Directions:
Start to cook your pasta. While that’s cooking, saute your minced garlic & minced lemongrass with some oil in a pan on medium-low heat till fragrant. Next, add in your mixed veggies and cook till tender. Now make your sauce- whisk together the soy sauce, sriracha, brown sugar, ginger, peanut butter, lime juice, zest and sesame oil. Add a few tablespoons of the starchy pasta water to the sauce to help thin it out to the consistency you like. Now drain your pasta and toss it into the pan with your veggies. Pour on your peanut sauce and combine the mixture. Let it heat up for a couple minutes then serve. Garnish with chopped peanuts, sesame seeds, scallions and lime wedges!
