A chocolatey chia pudding with a kick of coffee, this treat is sure to give a boost to your day!

3/4 cup Coffee (double brewed espresso beans, chilled)
3/4 cup Coconut Milk
1 tbsp Cocoa Powder
3 tbsp Nutiva Organic Coconut Sugar
1/2 tsp Vanilla Extract
dash Sea Salt
1/3 cup Nutiva Organic Chia Seeds
dash Cinnamon (optional)
Place coffee, coconut milk, cocoa powder, maple syrup, vanilla and salt in a blender and mix thoroughly.
Add chia seeds and blend on low speed for 2 minutes.
Pour into containers and chill in refrigerator over night.
Top with raw cacao nibs, fresh blue berries or strawberries or eat it just as is.
